Posting so I can pin it.

My mom gave me the recipe months ago and it's just been sitting in my email. I don't want to lose it! These are the best oatmeal raisin cookies I've made outside of another recipe that I lost a looong time ago. Nothing has been as good as that one (and I've TRIED) but these are close.

Chewy Oatmeal Raisin Cookies


1/2 cup butter, softened

3/4 cup all purpose flour

2/3 cup packed light brown sugar

1/2 tsp baking soda

1 large egg

1/2 tsp ground cinnamon

1/2 tsp vanilla extract

1/4 tsp table salt

1½ cups rolled oats

3/4 cup raisins

optional- 1/2 cup chopped walnuts


preheat oven 350 F

In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth.

In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture.

Stir in the oats, raisins. Add walnuts now if using them.

The cookies should be two inches apart on a parchment-lined baking sheet.

Bake them for 10 to 12 min taking them out when they are golden at the edges but still a little undercooked looking on top.  (very important. You will second guess yourself when you see how undercooked they look on top but if the edges are golden TAKE THEM OUT!)

Cool for 5 min before removing from cookie sheet.

This is getting a lot of attention and a lot of requests for the method. It's super easy!!

1. Roll out the top layer dough on to a lightly floured surface.

2. Beat an egg and divide it up in to separate bowls. Add food colouring to the bowls. I did 3 colours here: Red, yellow and orange. I kept my colours fairly light. Only used a few drops of each. You can experiment with this one, but you can see how nicely the colours darkened once baked.  I'm curious to see how more vibrant colours would turn out.

3. Use cookie cutters to cut out your shapes. Paint your leaves as you lay them on the pie. I just used a pastry brush from the dollar store.  Paint them lightly! If you use too much and it pools too much just blot it up with a paper towel.

4. Use a knife to cut the stems in the leaves.

5. Flute and paint the edge.

5. Bake as per the recipe.

Important: Half way through baking, cover the edges! A few friends have given this a try and it turned out great except the edges got too dark and I realized I forgot to include this step in the directions.

My tip for covering the edges, just cut off a square of tinfoil big enough to cover the pie then cut out a mid sized circle in the middle. Using oven mitts gently scrunch the tinfoil around the edges of the pie so it stays in place. The circle should just reveal a bit of the center of the pie..  This is so much easier than trying to mess with tinfoil strips that so many recipes tell you about.

I just used Pillsbury pie crusts and followed the recipe for apple pie on the box. This doesn't require any fancy baking skills or special dough. As long as you have a flat piece of pie dough you can do this! Just follow your recipe!

Important: If you use pre-made crusts, keep in mind that once you've cut out as many shapes as you can you will probably need to ball up and roll out the dough scraps to get enough cut outs to cover the pie.
If this is not something you want to do (Or are very good at ), then buy an extra pie crust!

Just for my own records so I can pin it...


3.5 cups powdered milk
4 cups powdered sugar
1.5 cups unsweetened cocoa powder
teaspoon salt

Teaspoon cinnamon

Mix everything together in an air tight container. Makes a LOT of mix so make it a big one. Make sure it's all well combined. Should keep indefinitely.

Can be made with Hot Water or Hot Milk.

To make fill your mug half full with the mix. Heat the water/milk separately and add just enough to the mug to make a paste making sure everything's mixed well before SLOWLY adding more of the liquid stirring  thoroughly as you pour.   You won't get clumps or chunks if you do it this way.  Top with marshmallows.

The best thing is that this recipe is easy to adjust. If you made it up and find it too sweet add more powdered milk and cocoa. If it isn't sweet enough add more powdered sugar.    I find this ratio makes a creamy, chocolatey mix without being too sweet or too bitter. The powdered milk makes it taste delicious with water if you don't want to use milk. Using milk gives it an intense richness that is delicious.

So after she went to bed last night, and I cleaned up all; the stuff she threw around and lined her stuff up so she could find it in the morning, I chatted with Manda online... She happened to make a comment, that I had JUST noticed myself... "Katie was on your phone all day calling people" and right before she said that, I looked down at my cell phone and saw it was plugged in charging... well in an attempt to charge... The battery was at nilch, and I had JUST charged it the day before. I adjusted the plug so that it was charging properly, and checked the called numbers list... She called at least 10 people (my list only goes up to ten). Talking for a good 30 min at a time. Manda told me that she talked to Brian for forever (45 min) and when he realized she was on my phone he let her go (thanks brian!) If she went over my minutes she's definately paying for them.

I left my phone here so she could call someone in case of emergency... what if she hurt herself or there was a fire, or something happened and she had to call me or 911... I couldn't leave her in a death trap with no access.... and since I was at my moms doing laundry I had a phone there... so I figured why not. She was supposed to nap till 4:15 anyways. She called Brian 5 min after I left my home... I wasn't even on the bus yet!

I called her at 4:15 and found it odd that A) She was with Brian... and B) She had to let me go coz my battery was dying... yet she called someone 10 min later and talked for 15 min...

This girl has definately worn her welcome with me, and it started last year... So much for best friends. She only wants me when she needs me... and then she takes advantage.

Well I didn't want a house guest this evening and for the most part I didn't... but I am serving as a hotel.

Katie needed a place to crash so she would be able to get to work on time (6am) and since she lives like an hours bus ride on the other side of the city, and the first bus would get her to work 30 min late... I relunctantly, but nicely agreed to let her stay the night.

Now I had no problem having her come over and hang out, I just -really- dislike sleepovers... weather they stay here or invite me over... i don't care... unless your gonna snuggle me and bring me flowers, I want everyone to retire to their own homes and beds when the party ends.

So Katie arrived at 12:00pm ... (I told her 2pm coz I wanted to sleep after work) whatever I get up and gather my laundry. She says she will be napping for a couple hours while I go to mom's to do laundry. That's fine, she set the alarm but asked me to call her and make sure she's awake so she will be able to sleep tonight.

I call at 4:15 to see if she's up and she says she never went to sleep and she is now with Brian... So alright, I finish my laundry and get home at 6:30 and Katie is back and all bouncy saying she still hasn't slept and she talked to her friend Heather who told her to go out for dinner... and to invite brian... no mention of me.. whatever.... So Katie leaves at 7:30 for dinner with heather, and she came home around 12:15... Completely intoxicated and I feel like an overprotective parent... and I say well.. you can get at least 4 hours sleep...and she laughed. She gave me her big mac and coke tho before stumbling into my bed. I had set up the bed for her... alarm set, fans on... so all she had to do was sleep... Of course now I will either stay up till 5am, or get a couple hours sleep before she gets up and wakes me up... we'll see what happens.

So much for "hey let's hang out on friday. I'll come over early and we can watch soaps and Mean Girls and play sega!"

At least I am an accomodating friend... even if I am a slightly annoyed one.
